The Lead line cook will be responsible for leading the staff dining hall at a boutique ski lodge.
The ideal candidate has experience with catering, the ability to multi-task, is comfortable giving directions and working in a fast-paced environment.
The Lead line cook must be comfortable serving large groups, and working independently.
Responsibilities and Duties:
Prepare and cook menu items, creating instructions and standardized recipes
Ensure that the food preparation, quality and presentation meet organizational standards
Prepare 200 plus staff meals a day
Supervise team of prep cooks and support team
Maintain a clean and safe working environment by maintaining occupational health & safety standards (e.g., WHMIS labels, food handling and storage, hygiene etc.)
Track of kitchen inventory, including food, supplies and equipment
Perform weekly orders
Run multiple stations during service
Perform kitchen work station opening and closing duties as required
Verify that prepared food meets requirements for quality and quantity.
Operate large-volume cooking equipment such as grills, deep-fat fryers, oven.
Pre-cook items such as bacon, to prepare them for later use.
Attend all scheduled employee meetings
Other related duties as required

ELIGIBILITY:
At least 2 years Kitchen Line Experience
Ideally 1 year experience in a resort or running a cafeteria
Catering experience is an asset
Must be over 21 and be legally able to work in the United States
