Job Description

Basic Purpose

Positions in this job coordinate and provide quality assurance for the day-to-day operations in food service for facilities within their assigned region. These positions are responsible for providing a comprehensive range of support to food service managers, directing the quality assurance accountabilities and efforts towards compliance.

Typical Functions

• Provides oversight for the assigned facilities to ensure effective management of the food service operations and effective planning and compliance with the master menu and specialized menu planning


• Conducts quarterly facility food service operations inspections to include but not limited to food safety and sanitation standards, compliance with ODOC policy and procedures, and the Oklahoma State Department of Health Food Code.


• Prepares inspection reports with recommend plans of corrective action for administrative review.


• Utilizes outcomes from the inspection reports to develop facility specific goals and objectives; monitors and tracks goal progression for each facility; and provides aid and direction in accomplishing established goals.


• Tracks facility equipment needs and replacement schedules.


• Assesses daily production schedules and daily food costs and provides a comprehensive report; identifies compliance concerns.


• Conducts annual operational audits on non-associated facilities


• Conducts quarterly training meetings for food service managers.


• Implements standardized monthly training for staff and inmates assigned to the food service program; provides orientation training to all new food service personnel.

Knowledge, Skills, Abilities and Competencies

Knowledge of the principles and practices of food service operations; of sanitation laws and public health codes and regulations; of food preparation, handling, and serving techniques; of health requirements and personal hygiene; of interpreting applicable federal and state food service laws and regulations, as well as interpretation and understanding of agency policy and procedures relating to food service operations.  Ability to establish and maintain effective working relationships; to communicate effectively both orally and in writing; to collect and organize data; to exercise good judgment in analyzing situations and making decisions; and to maintain confidentiality of records and information. Must possess good customer relation skills.

Education and Experience:

Bachelor’s degree and two (2) years of administrative experience in food service operations, auditing, or inspections, one (1) year of which was in a supervisor position; or a combination of education and experience.

Preferred Qualifications:   The above minimum qualifications plus two (2) additional years of experience in dietary, food service management, clinical nutrition, food preparation, food service operations oversight, or related fields.
