Executive Chef - FT - Horseshoe Hammond at Caesars Entertainment

Job Description:

SUMMARY: Manage and oversee food storage, preparation and production; create menus and determine efficient use of food items. Responsible for designing and coordinating menus for all restaurant facilities and banquet facilities.

ESSENTIAL DUTIES AND RESPONSIBILITIES:


  • Manage employees engaged in food preparation and production.
  • Review preparation and production procedures to ensure proper holding/ heating temperatures, rotation, flavor, texture and presentation of food for all outlets.
  • Review and update usage, guest count and revenue reports to recommend changes in the menu, staffing, production or methods.
  • Ensure proper education and training of staff on safe handling, preparation, production and presentation methods.
  • Review beginning and ending inventories to determine the best usage of food items to minimize spoilage.
  • Investigate, research and recommend menu changes.
  • Work with the Purchasing Manager to research availability of new food items.
  • Monitor all departmental expenses (food cost, labor and other expenses) to ensure compliance with budget.
  • Participate in planning and formulating the departmental budget.
  • Review staffing and departmental scheduling to ensure proper customer service and that production levels are maintained.
  • Control food production to maintain budgeted food cost.
  • Manage all aspects of Utility/ Cleaners employees to maintain a clean, sanitary work environment. This includes scheduling, product use and staffing.
  • Maintain a well-informed staff by conducting quarterly department meetings, daily staff meetings, and newsletters or postings in the department.
  • Monitor all coaching and counseling to assure consistency and timely completion.
  • Monitor and review all performance reviews for all employees to assure accuracy and timely distribution.
  • Other duties as assigned.

ADDITIONAL DUTIES/JOB DIMENSIONS:

Regular attendance in conformance with the standards, which may be established by Horseshoe from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to Horseshoe disciplinary action procedures up to and including termination of employment.

Due to the cyclical nature of the hospitality/entertainment industry, employees may be required to work varying schedules to reflect the business needs of the property.

Upon employment, all employees are required to fully comply with Horseshoe policies and procedures for the safe and efficient operation of company facilities. Employees who violate Company policies and procedures are subject to disciplinary action up to and including termination of employment

QUALIFICATION REQUIREMENTS :

EDUCATION and/or EXPERIENCE :

Equivalent to a college education with a thorough knowledge of culinary arts. 9-10 years food preparation experience is preferred.

LANGUAGE SKILLS :

Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization. CERTIFICATES, LICENSES, REGISTRATIONS: Must qualify for, obtain, and maintain a gaming license from the Indiana Gaming Commission.

REASONING ABILITY:

Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.

OTHER SKILLS and ABILITIES :

Knowledge of personnel policies and procedures. Ability to obtain the appropriate work authorization per gaming regulations.
