The Impact You’ll Make in this Role

As a Chef de Cuisine, you will have the opportunity to tap into your curiosity and collaborate with some of the most innovative and diverse people around the world. Here, you will make an impact by contributing to a talented culinary team working in a state-of-the-art kitchen tucked away in the pristine North woods. We provide breakfast, lunch, snacks, and dinner for groups varying between 20-50 people.  Staff meals are prepared and served daily for am and pm shifts.  We cook a variety of cuisines featuring local beef, chicken, lamb, wild game, fresh fish and seafood. We are currently dry-aging beef in house and working on starting in house charcuterie program. Our menus are product driven, and focused on using the best local, sustainable and seasonal ingredients available.

Chef de cuisine will be responsible for collaborating with the Culinary Services Supervisor and Team to create menus, design corresponding recipes, oversee and prepare those recipes, and manage the productivity of all kitchen employees, including line cooks, dishwashers, and if necessary, waitstaff. A chef de cuisine tracks the kitchen’s inventory, places orders, monitors equipment maintenance and condition, and ensures that a kitchen operates alongside corporate, state and federal environmental, health and safety codes and guidelines.

Primary Responsibilities include but are not limited to the following:


  • Work with Culinary Services Supervisor to manage the flow of daily meal services which includes but is not limited to making sure service is on time, ensuring special dietary needs are met and assisting with service as needed.

  • Oversee operational efficiencies and productivity of staff. This includes providing scheduling recommendations, complying with culinary staff break expectations, prep lists. 

  • Provide “on-the-line” food production for daily guest meals and employee meals. 

  • Create detailed production sheets and menu breakdowns/plans for each trip

  • Submit daily food orders based on inventory levels.

  • Collaborate with Culinary Services Supervisor and Team to train and educate all staff positions on new menu items and changes in procedures.

  • Communicate daily job expectations (T1 Board) and ensure the staff are in clean uniforms and are presentable to be in guest view.

  • Ensure the preparation of food is in accordance with sanitation and safety rules.

  • Establish and comply with an equipment PM program to ensure that all equipment is in working order, and daily maintenance is being followed. 

  • Expectation of leadership behavior.

This position may require:


  • Extended hours

  • Weekend work

  • Working evenings

  • Working on holidays as needed

  • Standing for long periods of time

  • Lifting up to 50 lbs. unassisted and over 50 lbs. assisted

Your Skills and Expertise 

To set you up for success in this role from day one, 3M requires (at a minimum) the following qualifications:


  • High School Diploma/GED (completed and verified prior to start)

  • Five (5) years cooking experience in a professional food service setting

  • Two (2) years in a leadership role in a professional food service setting

Additional qualifications that could help you succeed even further in this role include:


  • Degree Culinary Arts or Food and Beverage Management (completed and verified prior to start) rom an accredited institution

  • Basic knowledge of Microsoft office, and Excel programs

  • Strong interpersonal and communication skills

  • Creative

  • Self-motivated
