JOB SUMMARY:

Cuts meat properly and in correct portions to be used in Caesars Entertainment food outlets.

KEY JOB FUNCTIONS :

• Assists in ordering meats, poultry and fish as required by the menu.
• Properly store and rotates meat.
• Cuts all meat, adhering to prescribed portions.
• Reports immediately all defects, lack of quality or shortage in purchased meat.
• Keeps production records and reports as required.
• Uses sanitation and HACCP skills to maintain a safe and healthy butcher shop
• Ensure that all requisitions are accurately completed
• Demonstrates a pleasant and enthusiastic demeanor at all times.

EDUCATION and/or EXPERIENCE:

• High School Diploma or equivalent preferred
• Minimum of three years in meat cutting, preferably in hotel and restaurants.

QUALIFICATIONS:

• Fluent and literate in English
• Ability to use the following food preparation machinery and tools: Meat grinder, band saw, sharp knives, patty machine with moving parts, meat injector, spinning drum vacuum tumblers for marinating.
• Ability to uphold and demonstrate the highest level of integrity in all situations and recognize standards required by a regulated business
• Acts as a role model to other Team Members and always presents oneself as a credit to Caesars Entertainment and encourages others to do the same.
• Adheres to all regulatory, company and department policies and procedures

PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS:

• Physical strength and stamina to lift heavy cuts of meat weighing up to 50 lbs. on a regular basis
• Ability to stand for 8 hours
• Visual range must include immediate environment
• Auditory range must include near and medium distances.
• Dexterity to use food preparation machinery
• Ability to use repetitive hand motion, holding and grasping
• Ability to tolerate extreme temperatures

Positions that have contact with the public require the ability to work in a noisy

environment, and may be exposed to guests who use tobacco products. Also, non-public contact positions may be required to enter public areas from time to time, in connection with their duties, and may be subject to the same environment.
