Job Description:

SUMMARY
Generally found at larger facilities with 120 beds or more, this position assists the Food and Nutrition Manager and helps oversee the operation of the Food Service Department of a facility and the preparation, presentation and serving of food to residents in compliance with state and federal regulations.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
• May assist with recruiting, hiring, providing orientation/training, and retaining a sufficient number of qualified staff per assigned budget to carry out the responsibilities of the facility’s kitchen. Ensures employee performance meets or exceeds expectations and periodic performance appraisals are conducted on a timely basis.
• May plan menus that meet the nutritional needs of residents in accordance with recommended dietary allowance and state and federal regulations.
• Helps supervise food preparation using techniques that conserve nutritional value, flavor, and appearance.
• Assures food is prepared and served within scheduled time frames.
• Assist with the purchase of food, supplements and supplies per assigned budgets and through company approved distribution sources.
• Ensures food is received, stored, prepared, held and served under sanitary conditions.
• Inspects nutritional department regularly to ensure that it is safe and sanitary.
• Completes required forms and documents in accordance with company policy and state and/or federal regulations.
• Ensures quality assurance processes are followed in preparation of food.
• Coordinates dining room services.
• Assists with obtaining food preferences from residents to promote quality food service.
• Works with Dietary Consultant to achieve quality food service.
• Performs other tasks as necessary and appropriate when assigned.

ENTRY QUALIFICATIONS
• High school diploma or equivalent.
• Successful completion or current enrollment in course approved by the Dietary Managers Association desired.
• One (1) year supervised food service experience in an institutional setting focusing on planning, preparing and servicing regular and therapeutic diets.
• Must meet state-specific requirements.

SUPERVISORY RESPONSIBILITIES
Assists Manager with the supervision of the Food Services staff and others for whom they are administratively or professionally responsible.

PHYSICAL DEMANDS AND ENVIRONMENT
Working in institutional kitchen environment, employee may be required to sit, bend, stoop, see, talk and hear. May occasionally lift or move items of up to 50 pounds. OTHER REQUIREMENTS
Participates in (or conducts) company-sponsored training to safeguard against improper use and disclosure of resident’s protected health information. Monitors and ensures compliance with company policies, procedures and state and federal law. Agrees to adhere to and oversee communication of privacy guidelines relative to the confidentiality of residents' protected health information.
