Saint Anselm College, a Catholic, liberal arts college in the Benedictine tradition, is seeking a full-time (40 hours), year-round, Second Cook in Dining Services. The Second Cook will perform a variety of skilled tasks in food preparation, cooking and presentation. Sets up and stocks work areas with all necessary food, supplies and equipment. Performs a variety of food preparation tasks, such as cooking basic sauces, soups and vegetable dishes; under the supervision of a senior cook or chef; prepares breakfast ,lunch and dinner entrees and side dishes, including soups, grilled, broiled, steamed and fried foods, casseroles, salads, sandwiches, vegetables, and desserts and plate foods for service as needed. Prepare fruits and vegetables for use in various hot and cold dishes and slices meats and cheeses.
Perform other basic food preparation tasks as needed. During peak periods will work the front line, action station or grill area. Will also be responsible to clean equipment and work areas per standard procedures. Must follow established health and safety procedures, and ensure that such procedures are adhered to by other kitchen staff; assist in training and supervising the work of junior kitchen staff.
Qualifications include basic education (high school) plus five years of relevant commercial or institutional kitchen experience, or a combination of education and experience from which comparable knowledge and skills are acquired. This position also requires good reading and math skills as well as basic knowledge and skills in quantity food handling, preparation and cooking and good understanding of high volume kitchen operations.
